Ice, Ice, Baby

Well. It has been exactly SIX days since my last post. That is a long time, even for me.IMG_3728

BUT, for most of that time– we had no power. Zilch. Nada. Even days into the little event, I still found myself walking into rooms and involuntarily flipping light switches. They didn’t come on, of course.

In the hours that preceded good ole’ Winter Storm Pax.. we heard words like… “Catastrophic.” “Historical.” “Unprecedented.” “Dangerous.” 

I mean, really. Who wouldn’t be a little concerned? But as I grew up in Jacksonville… where we hardly ever GOT the hurricanes which “were heading straight for us at an alarming speed–” I did not believe them. In fact, I was in complete denial and so expected to be disillusioned by our weather personnel, that it wasn’t until the night before at 9:00PM that I freaked out a little and asked Lance to go get some bread.

And boy am I glad he did. Because we (and mostly ALL of our town) lost complete and total power for at least a few days. Ours was out for 3 1/2 days. At first it was fun (because we expected it to come right back in a few hours– certainly in 24 hours… I see now that we were amateurs.) We camped out in front of the fireplace and my sweet husband built us a little “wood-fired grill” in our fireplace and we roasted hotdogs and cooked baked potatoes. We ate by candlelight and it was all very fun. Then we dragged mattresses in and every SINGLE blanket that we owned (because the temperature inside the house was falling rapidly) and bundled up, and had a slumber party. It was a few days of no heat, no lights, no TV, no internet, nothing but each other. It was simple and sweet and nice… and cold. Because here’s the thing about no heat and kids– They don’t get it. They won’t sit still under a blanket with you– they won’t even keep their socks on most of the time. We’re chasing them around putting layers on them, and they’re ransacking the house like every other day, all the while peeling their layers off. So funny.

The next day, the ice began to melt. And that was really a neat experience. The ice had been so heavy on trees and branches that many of them fell or broke during the night. But once the sun really came out brightly, it was as if the houses and trees just shook themselves and the snow and ice began to fall off in huge amounts. It felt as though they were all.. alive in a Narnia kind of way. Kind of like a cat stretching in the sun. Lance was outside grilling for lunch and he had to sit in the back of his truck so he wouldn’t get pounds and pounds of ice falling on his head. Later that day, we realized the roads were safe and it might be a few days before we had power so we packed up and escaped to family living a couple hours away. THAT was nice. Warm shower, warm beds, warm food, and warm hugs from family we always miss. It was a real treat.

So here’s what I learned. (Not that I am an expert. I think we’ve established that already by my disbelief in the news reports.)

  • I’m not sure why people buy bread and milk at a time like this. Bread and peanut butter, yes. But when you lose power, you also lose the ability to keep milk cold. We actually did put our milk outside to keep it cold in the ice. Speaking of, grab some bags of ice and coolers and you can keep your food for a couple days like that. I wish we would have done that.. but again—> skeptic.
  • Fireplaces are SO amazing. And plenty of Firewood. And charcoal if you have a grill. If you don’t use your fireplace often, get it inspected every few years and make sure you know how to operate it.
  • Keep your Freezer closed. When the power goes out, you actually have a couple days on stuff in the freezer– just don’t open it too much.
  • Charge your phones and keep them fully charged for as long as possible. Ours were charged but we still ended up charging them in our cars– which was kinda nice. I was the sacrificial soul who volunteered to sit out there with our phones, the nice HEATER and a copy of The Antelope in the Living Room: The Real Story of Two People Sharing One Life— which let me just say.. HILARIOUS. I knew it would be, but reading it there in my car with the rare joy of warm hands and a handful of peanut butter M&M’s that I smuggled outside in jacket pocket– bliss, I tell ya. If you haven’t picked up a copy yet, I highly suggest you do. Whether or not you’ve been married a long time, this book will remind you just how funny we all are in marriage.
  • For the Love, consider buying a generator. Yes, you might never need it, but you just MIGHT. It’s funny, not three days prior, I actually “Pinned” something on Pinterest about disaster preparedness. Did I read it? No. Did I do what it suggested? No. Pinning does not equal doing. One can tell that by the amount of crafts I have pinned and the amount of crafts I have ACTUALLY done. Not equal, my friends, not at all.
  • Lastly, try hard NOT to be too frustrated. For two reasons, 1.) it does NOT help. Power will get restored when at all possible, and in our case, Georgia Power (and surrounding visiting companies) were working LONG hours, with little to no sleep, in extreme temperatures to repair a CITY full of damage. I think 3 1/2 days is pretty reasonable. But then, while I say that– I am currently, warm. And last week, I was.. well, not. 2.) Your attitude rubs off on everyone around you. After the first 15 hours, I was getting rather ornery. And impatient. And frustrated. And cold. And at one point, I noticed– the kids were just fine. Sure, they had little red noses and cold hands– but they were SO enjoying us all being together– it was like a huge party for them.

P.S. I’m hoping that the News Network’s usage of the word, “Historical” means we won’t EVER see this again– and 30 years from now, Lance and I will say– “Hey, remember that time we lost power for almost 4 days and we lived like Pioneers?” Not as in, the Pioneer Woman, of course– because that would just be cool. More like, Ma & Pa Ingalls. Charles and Caroline- to be exact. And I’ll say, “Yes, tis but a distant memory. A memory filled with snuggling our little kiddos (who will by this time, likely have kids of their own.) and the faint sounds of chainsaws breaking through fallen trees in the distance.” Ahhh. Yes, historical. That’s my hope.

Really though, we are SO thankful for God’s protection and amazing provision during last week.

Banana Oatmeal Muffins (Healthy-ish!)

Well. It looks like we *might* be in for more wintery weather tomorrow.

Blah. (I know I’m such a fair weather friend when it comes to winter.) I love the inside coziness that the outside temperatures force us into. I love the soup making and the fire building. But I do not love the dangerous road conditions and the cabin fever my kiddos get after about 12 hours of not going outside. BUT, as we are in the south, and this would be the second snow “event” in several years, I will put on my happy face and my mittens and enjoy it for the sake of my girls. And I will bake muffins.

These muffins to be exact:

Banana Oatmeal Muffins

Healthier Banana Oatmeal Muffins  

(adapted from Naturally Ella) 

Preheat Oven to 350 and prepare a muffin tin for use with cooking spray

Ingredients:

  • 1/4 cup unsalted butter, melted
  • 1/4 cup canola oil
  • 1/4 cup of raw sugar
  • Scant 1/4 cup of maple syrup
  • 1 egg, beaten
  • 2 medium ripe bananas
  • 1 tsp. vanilla extract
  • 3 heaping tbs. greek yogurt
  • 1/4 tsp. cinnamon
  • 1 tsp. baking soda
  • 1/2 tsp. baking powder
  • 1 cup whole wheat flour
  • 1/4 cup toasted wheat germ
  • 1/2 cup rolled oats
  • 1/2 cup all purpose flour
  • 1/4 cup of mini chocolate chips
  • 1 tbs. cinnamon sugar

Instructions: 

In a medium bowl- mash bananas, add butter, oil, sugar, vanilla, syrup, yogurt, egg. In a separate bowl- add dry ingredients together, flours, wheat germ, oats, baking soda and powder. Add dry ingredients into wet all at once and stir gently to combine. Fold in chocolate chips. (Original recipe calls for chopped pecans– which would also be great!)

Scoop into muffin tin, and top with cinnamon sugar.

Bake at 350′ for 20-23 minutes until a toothpick comes out clean.

A Birthday Girl & the Aristocats

Well, the floors are FINALLY finished! Woohoo! And I promise to post some great pictures next week–

But all that’s taking a back seat for now because Abigail is turning TWO on Sunday and we are celebrating her this weekend!

She loves cats and dogs, and she really loves the Aristocats Movie. She calls it, “Erybody” from the song, “Everybody Wants to Be a Cat.”

So this movie came out ages ago but it was recently re-released and we own it and a stuffed Marie… but other than that– Aristocats theming is pretty much.. non-existent. So I’ve been trying to use my creative juices to get this party to come together— and since the floors got finished about, OH– say 15 minutes ago… the house is finally quiet. And ahh… did you hear that? Quiet.

So I’m off to try to put this party on and clean up days of collateral damage from the painting job followed by the flooring job. It’s basically a zoo around here… but at least the carpet that looked like it lined an elephant’s cage is gone. WOOHOO!!!

I’ll be back next week with all manner of Puurrrrfect Party Pictures. (Yes, I did. I love a good pun.)

The Antelope in the Living Room– Available Today!

The other day my friend Amy and I went out to dinner and then to LifeWay… (Yes, we were a couple of crazy moms out on the town on a Friday night.)

And soon after we walked in, I hear her exclaim, “What??!?! I din’t know this was out yet!!!!” Which made me come quickly to where she was– because, well she’s kinda not someone who just goes around exclaiming all the time. Except that one time she pulled me out of the path of a crazy driver at 6:15AM in your sidewalk-less neighborhood…

Anyway, this is what we found!!! (And four days early!!)

Exciting! Too bad I covered up the M in Melanie– Clearly, I need more practice with this.

So Amy bought a copy but I restrained–  but only because Lance bought me one on pre-order for Christmas. Needless to say, I might chase the mailman down the street if he doesn’t bring it today. Maybe. He will for sure get a look of disapproval.

So for those of you who may not know, Melanie Shankle author of the Big Mama Blog, wrote this book and also Sparkly Green Earrings– which I talk about frequently. It’s my favorite book to give a new mom. I’m sure this will be another favorite book to give also.

Fun Disney Planning Tips

“Taking a Vacation is almost as much fun as Planning a Vacation”

That statement is never more true as when planning a trip to Disney. Having grown up in Florida, I’ve always been a lover of Disney Parks. It wasn’t until I became a parent however, that I REALLY had a fresh love of the Happiest Place on Earth.

In my opinion there are two types of Disney vacations– and both are absolutely FANTASTIC.

1. The one you plan for far in advance. This is the vacation you think about months or even a year ahead of time– scour the informational websites, plan everything down to the last little detail including Advance Dining Reservations (which can (and sometimes should!) be made 6 whole MONTHS in advance. Our first trip when Lucy was 2 years old, we only spent two actual days in the Park, but I planned for MONTHS. Some might be shocked to hear how many hours I spent (during nap times of course!) to research and come up with a plan for us. The result was that we were able to do everything important to us and we didn’t really miss out on anything. This is the trip that allows you to have the best chance of getting to do much of what’s on your list of “must-do’s” and so this is a great way to go about planning for Disney. And, it’s PURE fun to get to look forward to something as fun as a Disney Trip!

2. The Last Minute Trip. Maybe you just got one of those fabulous Pin Codes from Disney in an email and you and your family decide to go for it. You take the kids out of school, take a few of those vacation days, pack up the family car and head to Disney! Woohoo! Nothing is as exhilarating as a last minute vacation– especially to Mickey’s House! Whether for one day or a long weekend– Disney is one of those places you can truly escape for a couple days. So why not? Absolutely a great option. Sure, this trip may require a bit more flexibility on your part but as long as you’re ok with that– go for it!

So either way you decide to go–

Well, my advice would be to start with the date. There are many resources out there to help you choose but I found this calendar to be very helpful. 

Actually, the entire WDW Prep School site is genius. So much information, very nicely laid out. I wish I would have found it a long time ago!

Also– make sure to check out the Disney Food Blog! Great info– including reviews on dining plans and the MANY restaurant offerings at WDW.

After you have a date selected–

Then what?

Book your trip and start the fun planning process.

Where will you eat? What parks will you visit? What fun pictures will you take?

And that’s just the beginning!

I think I could have lived my whole life holding back. 

I love (and loved) my life as a mom and wife and I’ve never felt that life was lacking in ANY way. I have experienced both being a working mom and a non-working mom and both have blessings and challenges.

I’ve always had *interests* in things… but it took listening to him to realize my interests were passions.

He helped me SEE. He helped me see past my concern that I was being selfish to want other things. He helped me stretch myself beyond what I’d always known. He helped me realize the beauty in the art of doing what you love AND loving what you are currently called to do.

He helped me recognize that holding back from doing something that GOD has given you to do, is Sin. Not appropriate Mommy-Martyrdom. 

Lovingly, he calls me out on my baseless accusations against myself as I awkardly dog-paddle in a sea of insecurity.

But more than all of this, he holds my hand when I’m afraid. He prays for me. He reads what I write and offers encouragement.

On the days I’m certain NO ONE cares to read the words from my fingertips, he reads them.

And in this amazing unfathomable support, He has become my biggest fan– and my HERO.

For a HERO fills in the gaps of strength when we are lacking.

And I feel like I lack ALOT.

Truth: I am not the best cookie baker in our house Truth: I am not the best cookie baker in our house. It is hands down @friar_stuck — Today he added a pinch of fresh orange zest to Oatmeal Scotchies and they taste just like childhood.

My grandma used to make these and serve them to me on a pink plate with a small glass of sprite with ice. At 39, I now realize two things— 1. She would have adored my husband and 2. these cookies go best with coffee or tea.

What cookie makes you feel eight years old again?
There’s something unusually long about the winte There’s something unusually long about the winter months when we’re in a season of slow growth and imperceptible change.

The landscape outside your window TODAY can feel like it’s your landscape forever but it’s actually not.

If the view from where you stand looks rather bleak and not at all how you hoped, can I remind you to look up? 

These trees in my own backyard, captured this morning, last March, and last August, will continue changing in their own rhythmic way whether I’m watching them or not. There’s a comfort in that for me today— and perhaps for you.

Whatever looks slow and unmoving, with change almost too gradual to detect— is still very much in a pattern of forward transformation.

And these quiet days in the midst of our January-ness— we can be reminded that growth never really stops, especially in the hidden places.

This is the first complete weekend that we’ve been home since Thanksgiving. 😳 It sounds awful, especially for this homebody, but really what it means is, we’ve celebrated Thanksgiving and Christmas with family, attended one beautiful family wedding (Hey, Shelby! 👋🏻❤️) one 90th Birthday party for our beloved Granny, and had a family trip. They were all such sparkly gifts. Ones I don’t take for granted and so very different from last year.

But I do love home— and am happy to spend the second half of the day right here with this book which I’m truly enjoying. 📚❤️

After years of having one pub and no church, they are *finally* getting a church tomorrow, thanks to FB marketplace. And all the people said, “Amen & Huzzah.” 2. We’re still keeping Christmas over here — Though we’re slowly bending towards back to normal. The tree still lives and we’re celebrating the tenth day of Christmas with a fire & coziness before we pull out the pencils tomorrow. And finally, 3. Everyday Affogato. 2021 was a year of change for nearly all of us. Mu 2021 was a year of change for nearly all of us. Much of which we are happily taking with us into 2022.🥂

Nine squares is not sufficient to reflect the ways we’ve grown and changed, but it is a glimpse of the graces of the year behind us.

Not pictured: waking up to find our children taller and suddenly at our eye level, new laugh lines on our faces, sweltering pool days, fireplace dinners, Marco Polo chats with friends, family weddings & visits, mountain air breathed, books read, new jobs begun, school days, approximately 52 pizza nights, new rhythms & schedules, house repairs, car issues, and God always before us, behind us and within us. Do these Mince Pies make me look One-Quarter Briti Do these Mince Pies make me look One-Quarter British?

Truth be told, my grandma always used the jarred mincemeat and I wasn’t a fan as a child. Only last year did Lance and my Mom collaborate in the kitchen to try out homemade mincemeat filling and let me just say, we are never quitting these! 😍

The filling we use is from @bonappetitmag and it’s really good. It’s a gorgeous blend of apples, dried fruits (cherries, apricots, sultanas, figs, currants) with apple cider, spices, and a few other things. No meat, though.
