Fourth of July Fun!!!

We had a wonderful time in Florida this past weekend. We spent several days with family and were even able to have a couple of quick visits with a few friends. The time went by way too quickly as usual and I’m already a little homesick. Also, my camera battery had a convenient habit of dying on a regular basis while we were there so there are limited pictures. I don’t have any of the actual 4th for that reason, which is a shame because all my nieces and nephews were around and were so very fun and cute! They are all getting so big and sadly, it makes me realize how much I am missing of their lives. Then again, I know we are where we should be. Oh, if I could be two places at once, I think I would. I’m already looking forward to the next time, which may just be Thanksgiving. Our lives our full of rich blessing in NC, but we sure love and miss our families on a regular basis.

My Recent Culinary Adventures…

For those of you who know me, it is no surprise that I LOVE to cook. I love to make trusty old recipes that are predictable in taste and appearance… I love to take magazine recipes and try my hardest to make the finished product look like the photo… I love to try my hand at brand new things that seem difficult… I love to make things that most people would just purchase or buy frozen. Not because I think it’s always better, but because it is truly and inexplicably therapeutic. There is no substitute to coming home from work, getting comfy and heading to the kitchen for my almost nightly routine of washing, chopping, sauteeing and seasoning fresh vegetables while listening to some supremely mellow music. I Love taking fresh ingredients, adding the right amount of seasoning and patience and winding up with a dinner! The only two things better than preparing the meal itself— Eating it with my wonderful husband and…. having leftovers the next night so I can use the time on something else I enjoy. All in all, I genuinely look forward to the time I spend in the kitchen. It helps that I cook for someone who is so grateful and so willing to help with the cleanup!!!

I had to put this photo in here because I thought it looked pretty! I love to cook! In case you’re wondering: Butternut Squash Soup; Balsamic Glazed Asparagus; Wild Rice and Turkey Cutlets.

These are my nephews, Nate and Benny.. obviously not a food item.. but they are so cute I could gobble em up– so they made the cut.


I always keep a bag of Frozen Peas around.. not because they are good to eat but because I often burn myself in the kitchen and frozen veggies make great ice packs!! These injuries happen way too often. Tonight I was chopping an onion and just thinking to myself how dull my knives were getting and I took a healthy chunk out of my finger! Oh well, it’s worth the injury to have a hobby that results in a necessary provision! 🙂

Goodbye Papa

This Evening, February 28th at 5:10pm, my Grandfather, Glenn Blythe went home to be with his Lord and Savior after 87 years of abundant life. He was a wonderful Father and Grandfather. He was married to my Grandma, Helen for 63 years. They were married so young that my Grandma even lied about her age. She was 17.
They were blessed with one boy (my dad) and four girls (one set of twins among them.) He enjoyed bluegrass music, working on his house, gardening and puttering around his house and yard.
I have many memories of him but some in particular involve hot summer afternoons of picking blueberries when I was in elementary school. He used to lean down to me and whisper, “you can eat some if you want to. I don’t mind.” And wink. He always winked at me and smiled so big you would think he was playing a joke on you. His eyes always twinkled when he grinned. I always loved to hear him say, “Little Cindy-…” (and whatever followed.) One of his daughters (my aunt) was named Cindy, so the designation was necessary and it stuck.
He was a wonderful man who loved his wife, loved his family and loved his God. We are so sad to see him go but so happy to know how alive he must be in the presence of His Lord.

Don’t let the stern look fool you. He was a big teddy bear.

Lance and I are off tomorrow morning to say goodbye and to celebrate the life of my Grandfather. Please pray that we will be able to minister to our family in the midst of this bittersweet time.

I’m not really a waitress…

Sooo… Today I had the wonderful experience of getting a pedicure in the middle of the day. I had a class for my job which got out extremely early and happen to be across the street from a nail salon. It was a wonderful blessing to be able to sit for a little while, read a magazine and have someone make my feet pretty. 🙂 It’s the little pleasures sometimes. Anyway, I was very amused when the red color that I chose was called “I’m not really a waitress.” That made me laugh to myself, because it might as well have said, “I’m not really a banker.” There are so many days in my job where I feel that ALL I am is a banker. Seeing as being a banker is the solution to the present need for income, I enjoy many aspects of the job.. but there are those days, when I would love to tell everyone around me in a tone just above a whisper, “you know what? I’m not REALLY a banker.” But the important thing is, I’m not. I am more things than that. And sometimes after spending a week’s worth of long days in a job that takes so much energy, it’s really comforting to remind myself that I am…. a wife of a wonderful man who loves the Lord and loves me; I’m the daughter of two wonderful parents; I am an aunt to 10 fabulous kids; I am a sister; I am a friend to some wonderful people; I am a daughter in law; I am a cook who enjoys a challenge and loves feeding people; I am someone who likes to decorate my apartment and loves to entertain; I am a girl who loves to read books from her childhood; I am someone who relishes the time at home when I can pretend if only for a few hours… that I am a housewife; but most of all, I am a child of God– and that gives me more identity than stack of business cards or the nameplate on my desk. Never has red toe-nail polish been so therapeutic for me.

The Best Bridesmaids in the World.
Seriously. Each of these girls has had an important part in my life and it was wonderful to have them present at this special time. Whether we have known each other for 25 years or just over a year… they each mean so much to me and made my Wedding Day even more special!

We had way more fun getting our marriage license than the average person. We were giddy. Seriously. You would have thought we were actually married with this piece of paper. I love that I married a man who makes everything so much fun. It makes even the little things meaningful. I am so thankful for him.

I love these three cuties so much. Deanna, Elayna and Ava Blythe definitely have had a huge piece of my heart ever since the day they were each born. All my nieces and nephews have me wrapped around their finger.

These little guys are my nephews.. They were wonderful Ring Bearers!

Nate and Benny Blythe are Cousins and practically best friends. It is such a blessing to see so much of their dads, my brothers Chip and Matt in them. It was so great to have almost all of my whole family present. Only one of my wonderful brothers could not be in attendance and he was greatly missed. Everyone that was there traveled a long way and it would not have been the same without them!!

Truth: I am not the best cookie baker in our house Truth: I am not the best cookie baker in our house. It is hands down @friar_stuck — Today he added a pinch of fresh orange zest to Oatmeal Scotchies and they taste just like childhood.

My grandma used to make these and serve them to me on a pink plate with a small glass of sprite with ice. At 39, I now realize two things— 1. She would have adored my husband and 2. these cookies go best with coffee or tea.

What cookie makes you feel eight years old again?
There’s something unusually long about the winter There’s something unusually long about the winter months when we’re in a season of slow growth and imperceptible change.

The landscape outside your window TODAY can feel like it’s your landscape forever but it’s actually not.

If the view from where you stand looks rather bleak and not at all how you hoped, can I remind you to look up? 

These trees in my own backyard, captured this morning, last March, and last August, will continue changing in their own rhythmic way whether I’m watching them or not. There’s a comfort in that for me today— and perhaps for you.

Whatever looks slow and unmoving, with change almost too gradual to detect— is still very much in a pattern of forward transformation.

And these quiet days in the midst of our January-ness— we can be reminded that growth never really stops, especially in the hidden places.

This is the first complete weekend that we’ve been home since Thanksgiving. 😳 It sounds awful, especially for this homebody, but really what it means is, we’ve celebrated Thanksgiving and Christmas with family, attended one beautiful family wedding (Hey, Shelby! 👋🏻❤️) one 90th Birthday party for our beloved Granny, and had a family trip. They were all such sparkly gifts. Ones I don’t take for granted and so very different from last year.

But I do love home— and am happy to spend the second half of the day right here with this book which I’m truly enjoying. 📚❤️

The tree still lives and we’re celebrating the tenth day of Christmas with a fire & coziness before we pull out the pencils tomorrow. And finally, 3. Everyday Affogato. 2021 was a year of change for nearly all of us. Mu 2021 was a year of change for nearly all of us. Much of which we are happily taking with us into 2022.🥂

Nine squares is not sufficient to reflect the ways we’ve grown and changed, but it is a glimpse of the graces of the year behind us.

Do these Mince Pies make me look One-Quarter Briti Do these Mince Pies make me look One-Quarter British?

Truth be told, my grandma always used the jarred mincemeat and I wasn’t a fan as a child. Only last year did Lance and my Mom collaborate in the kitchen to try out homemade mincemeat filling and let me just say, we are never quitting these! 😍

The filling we use is from @bonappetitmag and it’s really good. It’s a gorgeous blend of apples, dried fruits (cherries, apricots, sultanas, figs, currants) with apple cider, spices, and a few other things. No meat, though.
