Lessons from a Tea Cup

At seven years old, hospitality was a small glass of sprite with three ice cubes and two oatmeal scotchies on a china plate. Nose barely reaching the pink-tiled counter top, I smiled up at my proper English Grandmother and waited. Steam billowing from her matching tea cup, together we covered the seven steps from the kitchen to the dining room. I nibbled my cookie and tried to remember to keep one hand in my lap pressed on my napkin as she asked me questions about Second Grade. “Yes Ma’am.” “No Ma’am.” I was polite and used my fanciest table manners in an attempt to distract her from the child using her prettiest china. Long before I knew the word….

I am beyond delighted to be sitting around the GraceTable today chatting about Children, Hospitality and Generosity– pull up a chair and join us there to read the rest?

Summer Garden Vegetable Soup

So July is kind of birthday central around our house. I turned 32 on Monday and Lance turns 35- 9 days later on the 30th– and it’s never fun to confine your birthday celebrations to just one day… therefore we basically celebrate for the last half of July! Which makes August National-get-your-nutritional-groove-back month in our house.  But at some point yesterday I realized the amount of… “treat” food I had enjoyed over the last few days and felt the need to cram my system full of vegetables and nutrients for dinner. So, this lovely Summer Vegetable Soup was born. Never mind the fact that it’s about 100 degrees outside– it was still great for a rainy summer evening.

Some notes: 1. Though this a healthy recipe, it does begin with 2 strips of bacon. The bacon lends a nice flavor and when your husband says, “Is there meat in this?” You can say, “Yes! Bacon!” And that just makes most husbands happy. If you desire to make this vegetarian, just substitute a TBS. of Olive Oil to sauté your veggies in. 2. Also in the slightly decadent category, I finish this soup with 1 tbs. Heavy Cream. Feel free to leave that out. I would not sub anything else but you could add a bit of greek yogurt– just allow your soup to cool slightly so it doesn’t curdle.  Anddd….3. I do not like big chunks of vegetables that can get mushy in soup– so things that tend to do that– (carrots, zucchini, etc.) I shred in the food processor (or on a cheese grater) and it makes the soup have the perfect texture– and it’s just beautiful that way! See?

Okay for the recipe– You can use just about any vegetables you fancy but here is what I did:

 

Summer Garden Vegetable Soup

  • 2 garlic cloves, minced
  • 1/2 an onion, diced
  • 2 strips of bacon, diced
  • 32 oz. Low Sodium Chicken Broth
  • 1 large zucchini, shredded and drained
  • 1 small yellow squash, shredded and drained
  • 3-4 medium carrots, peeled and shredded
  • 3-4 medium mushrooms, diced
  • 2 ears of corn, removed from cob or 1 cup of frozen kernels (Please don’t leave this out unless you really don’t like corn– it makes the soup!)
  • 1 can of Cannellini Beans, drained and rinsed. (set aside 3 Tbs. of these beans in a small bowl.)
  • 1 Regular Jar of Marinara Sauce (Homemade works perfect too!)
  • 1 tbs. fresh sage, diced (or 1/2 tsp. dried sage.)
  • 1 tbs. fresh thyme, diced (or 1 tsp. dried thyme.)
  • a pinch of salt
  • freshly ground black pepper
  • freshly grated parmesan

In a large dutch oven or soup pot, sautée the bacon. When it is not quite done, add the diced onion and garlic and allow it to begin to brown. When the onion becomes tender and is translucent, add the chicken broth and then the carrots, zucchini, squash and mushrooms. Add Herbs and a pinch of salt and pepper. Bring to a boil while stirring occasionally. While soup is coming to a boil, take the 3 tbs. of white beans you set aside in a small bowl. Smash them with the back of a spoon and then add the smashed mixture to the soup. (this helps thicken the soup.) Now add the whole cannellini beans and stir in. Add Marinara Sauce and stir. Add the corn now. (At this point, you need to look at your soup– to see if it is too thick. If it is, fill the empty marinara jar half-way full with water and then add to the pot. Depending on how juicy your vegetables were, you may or may not need to do this. )  

After soup comes to a boil, Lower the heat and Simmer for 10-12 minutes on low until soup is heated throughout.

Taste for seasoning, add more salt and pepper if needed. If your soup tastes like it needs more flavor, you can add a tbs. or two of basil pesto– delicious!

Remove Soup from heat and allow to cool slightly. Add Heavy cream if using. Stir.

Serve bowls of soup with Grated Parmesan– and this Cheddar Zucchini Cornbread is a great accompaniment (and a great way to use up some more shredded zucchini and get more in your kiddos!)

Both the soup and the cornbread make enough for either a crowd, or plenty of leftovers!!!

Catching Up (The biggest Reset Monday EVER!)

So before Lucy started school, Mondays were also referred to as “Reset Mondays” around here. The day to catch up on everything that fell by the wayside over the weekend while we were enjoying our family time together. A good day to just catch our breath and prepare for the week.

After last week, do we ever need to press the reset button around here!!!! Quick recap: After my post on Wednesday morning, Abby woke up from a little nap VERY SICK. I hesitate to use the word “lethargic” but she was as close as I have ever seen her. She was only wanting to sleep, had stopped wetting diapers (uh-oh) and was completely refusing to drink. (Second- big uh-oh.) I called my pediatrician, but thankfully while waiting on a call back, my mom held her for a few minutes and (expert retired medical professional that she is) immediately noticed her increased heart rate and fast breathing. We hightailed it to the ER in town and they confirmed that she was dangerously dehydrated. After a few tests, they determined she needed to stay overnight and once she got some fluids and rest, she began to bounce back a little. As soon as Daddy arrived back in town with us, she perked up a little and by the next day, I was fighting the bug myself while she was trying to climb her own IV pole!! Those little ones get sick VERY quickly. Much quicker than I realized. Thankfully, she also bounced back with the right medical care.. and by God’s grace. I’m so thankful she is okay and that my God-given mommy-instinct (coupled with my own mother’s advice) told us to get her some help, QUICK.

So after battling the bug myself (as did Lucy) we finally did make it home on Friday night. All four of us. With zero incidents along the way. We even stopped over in St. Simons Island for a little family fun for a couple hours, which we all needed!

Saturday we chilled, ran errands and enjoyed being home. Those kids of ours destroyed their playroom in record time. I guess being away from one’s toys will do that.

Today, I find myself staring down a very short week. I’m headed to a conference later this week so I have a TON to do. I’ll hopefully share more about this conference later this week, but it’s the type of thing I had to be convinced to sign up for five months ago and I am certain I would have been stressing about it if we hadn’t been so busy dealing with, you know, LIFE.

So today is a mix of carline, errands, LAUNDRY, finishing prep for closing out our ladies Bible Study tomorrow night, cleaning, coffee, packing, blah blah blah. But I have not forgotten!!!!

Lift Up Your Eyes

My grandmother (whom I miss every time I make scones) was from England. She was genteel and polite and soft spoken. She was stoic. (They say that’s the English way.)

I (lovingly) blame her for the way I tend to “bottle” things up. The way I tend to stuff emotions down day after day, completely surprised when they spill out everywhere once there is no more room in my head and heart. (It’s not necessarily a good thing.)

I go into survival mode. “Doing” things I feel I can do. Not being able to control certain things, I focus on what I can do, and I do it. For example, the day after Lance lost his job, I went grocery shopping and came home with this, among other things–

I mean, really. It was on sale, but still.  Anyway, while saying, “I’m fine, I’m fine,”  I only partially deal with the reality. Thus, greatly limiting God in changing my heart through this ordeal.

Yesterday, while allowing a simple act of trying to assist in the job search to turn into a frantic charade of striving, I completely lost sight of whose battle this is.

He came up behind me, sensing my heightened emotions ready to let loose, and told me to put on my shoes and go for a drive. Clear my head. I’m sure what he well knew was that I didn’t need to clear my head as much as I did just to clear my HEART of all this panic and allow God’s truth to calm my self-induced anxiety. 

So wrapped up in the waves crashing all around me and not (at the moment) knowing how to pray, I sent her a tentative text.

“Struggling.” It said.

“Can I call you?” She said.

Do you have a friend like that? Maybe you’re blessed enough to have several. Friends that know your heart. Your journey. Your struggle. Friends that you can call at your absolute craziest. They don’t mind the crazy. They just listen and then lovingly lead you to the truth.

She let me shed self-indignant tears at watching “this happen” to the one I love. She listened while I complained. While I panicked. While I strived to understand. Listened as I strained to see the when and how.

“I was wondering when I’d get this call. Wondering when you would finally let it out.” She said. I sighed. Even in my frustration, I praised God for blessing me with so many pillars of love and truth. Thankful that she was available.

Then she talked. And I listened. (Or rather, HE talked. Through her.)

She reminded me of Peter. Peter, who walked on water— but only because of Christ. Peter, who took his eyes of His Savior (for a moment!) and began to fall. He took his focus from the real Storm Soother and focused on his circumstances. “Wind. Small Boat. Large Waves. Wait– I’m WALKING on water!? That doesn’t even seem safe. Maybe I should… Maybe I could turn around. Maybe I can’t do this after all. Why did I think this was a good idea???” Then he began to sink.  It literally says, “When he saw the wind, he was afraid, and beginning to sink he cried out, ‘Lord save me.” (Matt.14:30)

As for what happened next, Jesus could have been so frustrated with him that He just let him tread water for awhile. Or maybe let him go under a couple of times– before sighing and pulling him back up. But he didn’t.

“Jesus immediately reached out his hand and took hold of him, saying to him, “O you of little faith, why did you doubt?” (vs 31) Immediately. He is faithful to rescue us from our worry when we place our eyes on Him. The moment we surrender our own ways of trying to figure things out, He takes our anxious thoughts and presents us with the “peace that passes understanding.” To the human heart, a peace like that would not make sense in the midst of difficult circumstances. There would be no formula, clear answer, or plan of attack. It literally would not be understandable, but would “pass understanding.”

Peter was faced with a choice. Trust himself and find himself wanting for the task. Or trust Jesus and allow Him to perform the miracle. Peter was just a man. He was not God. In fact, he was a fallen man who would later deny Jesus. But as my dear friend reminded me, Peter was a sinner. He didn’t always trust God right away. But when he began to sink, he knew Who to call out to. And he believed.

May the same be said of us.

“I lift up my eyes to the hills. From where does my help come? My help comes from the Lord, who made heaven and earth.” Psalm 121:1-2

Tuscan Vegetable Soup

One day earlier this week, Lucy and I opted to stay at home instead of fight the rain so I settled in to make Vegetable Soup and homemade bread for supper. Soup and Bread makes one of the BEST meals ever and I am always looking for more great soup recipes. This one will definitely go in the “recipe notebook.”
I’m including a link to the original recipe in case you want to compare, since I made several changes based on our tastes. Let me know if you try it and like it!

Tuscan Vegetable Soup
(adapted from Ellie Krieger)

1- 15 oz. can canellini beans, drained and rinsed
1 tbs. Olive Oil
1/2 Large onion, diced
4 carrots, sliced
Sliced Mushrooms (How ever many you want, I had four leftover so I threw em in!)
One small box of frozen lima beans, drained and thawed partially
2 cups shredded Zucchini (She said to use one small diced zucchini, but I had shredded in the freezer.)
1 clove of garlic, minced
1 tsp. dried thyme
1/2 tsp. dried sage
1/2 tsp salt (I didn’t use quite this much, I just did it to taste. a pinch at the beginning and a pinch at the end)
1/4 tsp freshly ground pepper
32 ounces low sodium Chicken Broth (Or Vegetable!)
1 (14.5 ounce) can of diced tomatoes with the juice
2 cups chopped fresh spinach
1/3 cup grated parmesan (for garnish– don’t leave this part out– it’s so good!)

In a small bowl, mash half of the cannellini beans with the back of a spoon, set aside.

Heat the oil in a large soup pot over med-high heat. Add onion, carrots, mushrooms, zucchini, garlic, thyme, sage, a pinch of salt and pepper, and cook stirring occasionally until the vegetables are tender, about 5-9 minutes.

Add the broth, tomatoes and lima beans and bring to a boil. Add the mashed and whole white beans and the spinach and cook 3-5 minutes more until the spinach is wilted.

Serve topped with parmesan cheese (and a small scoop of basil pesto if you have it!)

Crispy Peanut Butter Cup Bars

You know those little peanut butter balls that often pop up on a Holiday pot-luck table around Christmas time?

The ones with peanut butter & confectioner’s sugar, rolled into little balls and dipped in chocolate? You know the ones… sooo good. Sooo bad for you.

Yeah… I’m a big fan of those.

I found this recipe for something very similar– but in my opinion, far superior because they are WAY faster. Basically you mix all the ingredients (except the chocolate) in a big bowl, press it into a 13 x 9 dish, melt the chocolate (I use about 1/2 as much chocolate as called for— and it was plenty rich enough!) in the microwave, spread it on top and refrigerate the entire dish until the chocolate hardens. Then you cut them into small squares–they are rich– and serve.

I only ever make them when we have to take something somewhere… basically because eating the entire pan of them would be my weekly calorie allotment… and that’s just not a very good idea in the middle of summer…. not to mention bathing suit season.

This particular recipe has been listed by someone else, but I love trying Ree’s recipes! Her Cinnamon Rolls are some of the BEST I have ever made or had! This site is one of my all-time favorites for culinary inspiration. Try it out!

Super Sloppy Joes & Roasted Potatoes

This is truly one of the favorites here in our little nest.
Homemade Sloppy Joes.

Now, those of you who have already cringed and quickly vowed never to read this blog again for fear of compromising your good taste, hear me out: these are not, I repeat NOT your childhood Sloppy Joes. They taste nothing like the slightly foul product that rhymes with “Sanwich.” Yuck. These do not come in a can and thus, they do not taste like the come in a can. However, they are still rather quick to prepare.

Try ’em. You like ’em!

Super Sloppy Joes (Adapted from Rachel Ray)

1.25 lb. of Ground Turkey or Beef (I like to mix half and half to cut the fat.)
¼ cup of minced onion (fresh) or a few tbs. of dried minced onion
¼ cup of Brown Sugar
Montreal Steak Seasoning (or other steak seasoning)
1 Tbs. Red Wine Vinegar
1 Tbs. Worcestershire Sauce
2 Tbs. Tomato Paste
2 Cups Tomato Sauce

Brown the meat, seasoning to taste with steak seasoning and the onion.  As meat begins to be done, add brown sugar and allow it to caramelize. When meat is browned, add vinegar and Worcestershire and cook for 3-5 minutes.  Add tomato paste and sauce and cook until reduced and thickened a bit. Taste Sloppy Joe Mixture and see if it needs extra seasoning. (sometimes extra brown sugar is needed.)
We like it on lightly toasted buns of some kind and roasted potato wedges (recipe below)

Roasted Potato Wedges
* Glass 9×13 Dish (you may need more than one); spray with Pam
* Several Large baking potatoes
* Olive Oil
* Seasoned Salt; a few tablespoons of Flour
Cut Potatoes in wedges, lay wedges in dish. Drizzle liberally with olive oil and sprinkle lightly with flour, seasoned salt (to taste) breaking up any lumps of flour. (Also great to add sprinkled Parmesan cheese—in the green can—)
Cook on 425’ degrees until Potatoes are getting golden brown and crispy. If you use a glass dish, the potatoes will get brown on the bottom and you don’t have to flip them.

We serve all this with dill pickle slices and a stack of napkins!!! 🙂
(And of course, a nice tall glass of sweet tea!)

Truth: I am not the best cookie baker in our house Truth: I am not the best cookie baker in our house. It is hands down @friar_stuck — Today he added a pinch of fresh orange zest to Oatmeal Scotchies and they taste just like childhood.

My grandma used to make these and serve them to me on a pink plate with a small glass of sprite with ice. At 39, I now realize two things— 1. She would have adored my husband and 2. these cookies go best with coffee or tea.

There’s something unusually long about the winter There’s something unusually long about the winter months when we’re in a season of slow growth and imperceptible change.

The landscape outside your window TODAY can feel like it’s your landscape forever but it’s actually not.

If the view from where you stand looks rather bleak and not at all how you hoped, can I remind you to look up? 

These trees in my own backyard, captured this morning, last March, and last August, will continue changing in their own rhythmic way whether I’m watching them or not. There’s a comfort in that for me today— and perhaps for you.

Whatever looks slow and unmoving, with change almost too gradual to detect— is still very much in a pattern of forward transformation.

And these quiet days in the midst of our January-ness— we can be reminded that growth never really stops, especially in the hidden places.

This is the first complete weekend that we’ve been home since Thanksgiving. 😳 It sounds awful, especially for this homebody, but really what it means is, we’ve celebrated Thanksgiving and Christmas with family, attended one beautiful family wedding (Hey, Shelby! 👋🏻❤️) one 90th Birthday party for our beloved Granny, and had a family trip. They were all such sparkly gifts. Ones I don’t take for granted and so very different from last year.

But I do love home— and am happy to spend the second half of the day right here with this book which I’m truly enjoying. 📚❤️

The tree still lives and we’re celebrating the tenth day of Christmas with a fire & coziness before we pull out the pencils tomorrow. And finally, 3. Everyday Affogato. 2021 was a year of change for nearly all of us. Mu 2021 was a year of change for nearly all of us. Much of which we are happily taking with us into 2022.🥂

Nine squares is not sufficient to reflect the ways we’ve grown and changed, but it is a glimpse of the graces of the year behind us.

Not pictured: waking up to find our children taller and suddenly at our eye level, new laugh lines on our faces, sweltering pool days, fireplace dinners, Marco Polo chats with friends, family weddings & visits, mountain air breathed, books read, new jobs begun, school days, approximately 52 pizza nights, new rhythms & schedules, house repairs, car issues, and God always before us, behind us and within us. Do these Mince Pies make me look One-Quarter Briti Do these Mince Pies make me look One-Quarter British?

Truth be told, my grandma always used the jarred mincemeat and I wasn’t a fan as a child. Only last year did Lance and my Mom collaborate in the kitchen to try out homemade mincemeat filling and let me just say, we are never quitting these! 😍

The filling we use is from @bonappetitmag and it’s really good. It’s a gorgeous blend of apples, dried fruits (cherries, apricots, sultanas, figs, currants) with apple cider, spices, and a few other things. No meat, though.
